
These days,
I am in a muffin – cupcake mood. I am literally craving for comfort food and
that is why of course, I came back to my first love – muffins. I mean, I really
enjoy creamy cakes, glazes and so on, but there is something about muffins that
you cannot fight.
I didn’t
even try to. I just went by the wave and here is what came out: soft and puffy
banana chocolate muffins with crispy almond crunch on the top. And ready in a
zipcode.
What do you need
½ cups of
powder sugar
1 cup of
milk at room temperature
1 ½ cups of
sifted flour
1 tbsp of baking
powder
2 eggs at
room temperature
100g of
softened butter
2 tbsp of
vanilla sugar
2 tbsp of
vanilla essence
2 tbsp of
grated rind of lemon
100g of dark
chocolate broken in small pieces
2 medium
sized bananas
20 g of
peeled almonds crushed
1 tbsp of
powdered sugar
How to prepare it
Add the
eggs, ½ cups of sugar, the grated lemon rind and vanilla sugar in a bowl. Mix
until the consistency is white and creamy.
Prepare2
cups, one for mixing the milk with the vanilla essence and one for mixing the
four with the baking powder.
Add the
butter and mix until fully incorporated. Continue by adding alternatively quantities
of four (mixed with the baking powder) and milk (mix it with the vanilla essence
in the cup, before adding to the eggs and butter mixture) and you will have a nice
creamy textured dough.
On a
chopping board, cut the bananas in cubes and break the chocolate. Fold gently
in the mixture with a wooden spoon.
In a muffin
tray, place the paper shells and add mixture in each of them (I make it almost
full, but not exact, otherwise it will spill over the margins and the effect
will not be the desired one).
Sprinkle
with the crushed almonds mixed with the remaining sugar. This will make a very
nice crust as the powdered sugar will start to glaze the almonds and the later
will start browning just about perfectly in the 20 minutes of preparation.
Place in the
preheated oven and 1800 C for exactly 20 minutes. Let them cool tor
20 minutes and that’s it, your comfort dessert is done!
